Antioxidative Activity of Crysanthemin in Black Rice Hulls

|
Antioxidative activity of black rice hull (Oryza sutiva L., Indica type) extract was determined by the thiocyanate method using linoleic acid system. A 0.5% trifluoroacetic acid (TFA)-95% ethanol extracts of black rice hull, having strong antioxi-dative activity were fractionated by an Amberlite XAD-7 column chromatography and preparative HPLC techniques, and the active component was characterized by FAB-MS, ©öH-NMR, and ^(13)C-NMR spectrometry. The active components were found to be anthocyanin pigments, and one of them exhibiting antioxidant property as strong as a-tocopherol was identified as crysanthemin (cyanidin 3-O-¥â-D-glucoside).
